Is it possible to setup a "return receipt - message read" notification that
is "hidden" from the receiver? I was told that Outlook can do this, but I
never use this feature myself. Is this doable in Entourage or via a script?

No. Recipients will always be able to see if a sender has requested a
recipt, even if there program is set up to send them automatically.
