I have been trying to figure this out, too. I have tried the instructions
on the MVP site but I can't get it to work. If you figure it out, please
post the solution here.
The solution is in the second page of the site given:

The trick is to ask that your message include a header
"Disposition-Notification-To:", with the value being your e-mail address.
However; here's the rub: it does not work well for Outlook on Exchange
servers. When Outlook receives a message with this header, it replies with a
read receipt when the message is read. But, the reply sent by Outlook is in
a format that Entourage cannot read and simply does not see! So you still
don't know if your message has been read....
I wish there were a better solution, but I don't know of any. Anybody has
something that works?
