recipient name auto-entry editing?

Entourage 2004 on PowerBook 10.3.4
(Though the question seems general enough for any Entourage 2004.)

When I create a new outgoing message and begin typing the name or
address, Entourage automagically displays all names/addresses that begin
the same way.

Where is that data cached?
Is it editable in whole or in part?

There are tricks to edit it, per the above. If there's an address you
want to delete, you can add it to your address book and mark it as
junk or delete the entry.
