Try this one, see if you get the same results we do:
Create a recurring appointment with a weekly recurrence, invite at least one
other person in your office, make the appointment recurrence for at least 3
months. Then, go and move just one of the occurrences to a different day.
When we do this, Entourage hangs nearly every time. It happens almost
without fail. There's nothing else going on at the time that we can find.
The only way to get this working again is to reset the Synchronisation on
the account (after force quitting, restarting, going offline, quitting,
opening Entourage, selecting tools/accounts/Exchange Account/Advanced/reset
synchonization, then go Online. Phew!)
