I've found the outlook option that controls the default for saving new
addresses, but not how to change the way/order my existing addresses are
stored/presented (I now realise there's a lot of people I know the christian
name of but not the surname!)

Is there a way?

You can use the freeware "ChangeNames" to do this:

Post is too vague. You did not state the view you want to customize. Most
views allow extensive customization of the sort order and filters you apply.
