removing deleted items & junk w/o opening

I have 300 Deleted Items. How do I really get rid of them forever?
Also, when I look at my Junk In, how do I delete them without opening them? I thought that by opening a message you were confirming your existence to the sender.
I used the Amazon Germany website once and ever since I've had huge amounts of Junk, and had to put my security to maximum level: only known senders.

To delete messages from Deleted Items, select them in that folder and delete
them. Or you can use a schedule, as I do, to delete them On Quit or
according to a schedule.

To delete messages from Junk (or anywhere else) without looking at them,
turn off the Preview Pane (View -> Preview Pane -> None). Then you can
select one, more, or all of them and delete them. Since you're not
previewing them, you are not opening them or otherwise confirming your
existence.

You can also set Entourage to Work Offline under Entourage in the Menu bar.

WRONG. Please read for comprehension:

The only way anyone can track your reading of an email message is if you
do *both* of these:

a. view the content of the message
b. allow images to display

Entourage, by default, does not display images unless you explicitly
tell it to by clicking "Download pictures" at the top of the message
window.

FYI - You can override this default by putting the sender's address in your
Entourage Address Book and selecting the Security Preference "Automatically
download pictures from my Address Book contacts." Whether you want to do
this depends on how paranoid you are.
