Removing / modifying button layouts in Entourage?

One of my favorite things about Apple Mail was that it would allow me to
clean up the button layout. Remove labels, re-order, etc. It doesn't seem
that Entourage is quite so brave. Is that the case?

Unfortunately, yes. And it's been requested quite frequently, but it won't
do any harm if you send Microsoft your feedback by clicking on "Send
Feedback on Entourage" in the Help menu.
