Reply sometimes tabs, sometimes >

When I reply to some of my email messages, it sometimes indents the previous
message, sometimes prefixes it with a > (>). It drives me crazy when I
really only want the >. What's going on? How can I configure Entourage so
that it always uses the >?

Entourage indents whenever you are quoting HTML formatted email. Simply
turn off the HTML formatting to have the > appear instead.
