Template. I now have to open the formatting palette and make the changes

Well, a SimpleText document is plain text with no formatting. I'm in 2004 at
the moment, but I think that even back in 2001 a plain text document will
open in Word in Plain Text style and Courier font. In X and 2004 we just
have to select all and change the style to Normal in the Formatting Palette
by a single click.
In 2001, press cmd-A to select all, then either go to Format/Style, change
to Normal in the long list, or - much easier - keep the Formatting toolbar
always open (go to View/Toolbars/Formatting, if it isn't) and again just
lick Normal on the short Styles list there.
