Sending out mailshots

If I want to send out a mailshot to 50 different contacts
in one go, can I do it without the names of everyone I
have sent a copy to appearing on the emails

Put the names in to the BCC field, and use your own address in the To
field. You can create a new contact with your e-mail address and a
different display name, like "Hidden Recipient List" or "Mailing List"
to put into the To field, if you want.
