Setting a default "send" mail account

I have 3 e-mail accounts. If I send 3 test messages to
myself, I notice that Outlook scrolls between each email
account as sender. So message 1 would be from (e-mail address removed),
message 2 from (e-mail address removed) and message 3 from (e-mail address removed)

My "sent" e-mails scroll from one account to the other, in
spite of my setting one particular e-mail account as my
default account.

Any ideas anyone? Thanks
