Setting Unicode as the Default Character Set

Dear All,

I just installed Office for Mac 2008, and have been trying to figure out how to set Unicode (UTF-8) as the default character set when I compose a message.

I need to be able to send emails in two languages and would like to avoid having to set Unicode every time I send an email with non - English characters.

Any help would be greatly appreciated.
