Is there a way to turn off the default setting of
Arrange By, "Show in Group"?
I know you can turn it off for the parent folder, and then any new sub
folders created will inherit those rights.
But for instance, if I were to open a Microsoft News Server list that I've
never opened before, my Entourage client will automatically set it to "show
in group". I'd like to have the client set so the default is not "show in
group". Also, is there anyway to go and reset all existing folders without
changing each one individually?

Sadly no. Please request this of Microsoft via the Help menu.

If it really drives you nuts, play with Custom Views and read everything
through them - but that's a kludge.
