Is there a way to force the automagically added signatures to adopt the font
one has selected as default for email replies?

Replies always use the format of the original message.

You must mean the signature, because I have a font specified as my
preference for replies and that is always automatically selected when I
reply. The signature always gets added-on with the incoming message's font.
Most annoying, but not a big deal.
