1. How do I create "stationary" and save it?
2. How do I attach a signature for reply and for new messages?
3. How do I go to the PREVIOUS (i.e. next one down) message after I
delete (it wants to go to the NEXT (i.e. next one up))?

Any help would be much appreciated.

This feature is not built into Entourage. See the options here for creating
templates:

A third party application you might want to check out is MailTemplate:

Specify a default signature
1. On the Tools menu, click Accounts.
2. Click the account that you want to specify a default signature for, and
then click Edit.
3. Do one of the following:
€ For IMAP, Hotmail, or POP accounts, click the Options tab.
€ For Exchange accounts, click the Mail ta4. Under Message Options, on the
Default signature pop-up menu, do one of the following:
€ To insert a specific signature each time you send a message from the
account, click the signature.
€ To insert a signature from your random list each time you send a message
from the account, click Random.
3. How do I go to the PREVIOUS (i.e. next one down) message after I
delete (it wants to go to the NEXT (i.e. next one up)M.

For all keyboard shortcuts see Help in the menu bar and search for keyboard
shortcuts. A third party application, Keycue is a good way to learn
shortcuts for new applications. Keycue shows you a concise table of all
currently available menu shortcuts. Just press the command key to see the
menu shortcut table. The neat thing is it lets you see your Entourage script
shortcuts in addition to the ones added by the Entourage application.
