has anyone figured out how to synch your P800 with Entourage without
converting twice (i.e. through iCal and iContact - both of which are
redundant and I care not to use...)

It has nothing to do with preference. There _is_ no other way than to sync
via iCal and Address Book. My shareware scripts Sync Entourage-iCal and Sync
Entourage-Address Book will do the syncing for you. You need never look at
iCal or Address Book, ever, if you find them distasteful (I understand). In
the ReadMe/Preferences, take a look at One-Way vs. Two-Way syncing. I
haven't heard of too many problems using the P800, but it's always possible
that its software to iSync creates some corruption. If so, do One-Way
Syncing Entourage Overwrites Address Book.

You can try out both scripts for free for 14 days (at least the Panther
version of Address Book script; Jaguar version requires Lite version). The
iCal script works only in Entourage 2004, not X.
