Not sure on your sort question. I don't understand why there isn't a sep
fields for F-name and L-name. I'd like to know how to sort by last name.

On your second question, that's easy. Put your own email address in the "To"
field and put your recipients email addresses in the "BCC" field. Your
recips will only see your name and no one else.

Regards.

In Entourage 2008, you can add Columns: First Name, Last Name. Look under
View in the Menu bar --> Columns.

In Entourage 2004, the Address Book displays the names as FirstName
LastName, but they are sorted in alphabetical order by LAST name, not first
name. Click on the Name column and you'll see for yourself.

Groups are another matter - they indeed are sorted by first name. Get Paul
Berkowitz's script Group Sort X.

It will sort all your groups alphabetically by last name. Whenever you add
any new group members , run the script again on just that group - it's
instantaneous when done that way.
Also will like to know how to send a mail to a bunch of people, with out them
being able to see the emails of the people on the mail.

Use the Bcc line. You need to add yourself in the "To" field. Many ISPs will
not send unless there is a To contact. FAQs on Bcc.

Look my earlier post. You can sort your address book by last name. Just drop
the NAME field, and activate the FIRST NAME and LAST NAME fields. You do so
in =>VIEW, =>COLUMNS when looking at your address book.

In Entourage 2008 does not give the option to get a column for firs name and another for last name. It has only the option for name. If you choose to sot it by name, it will do it by the last name of the contact.
I want to be able to see Name, last name but sorting them in a way that will appear satring from A on the name and not A on the last name.

Entourage 2008 DOES have that option. You have to add that column. As I

Thanks to this thread, I figured out how to get separate columns for Last Name and First Name, then sort my address list byeither. However, when I compose a new message and click in the address field, I do not see any way to replace the single "Name" column with one for last name or one for first name, resulting in my address list being in a very odd order. This was much simpler in Entourage 2004.
