Open the Progress window (Window>Progress, or Cmd+7), and then click on
Cancel next to the process that you want to stop.

Typing CMD-. will stop the send/receive process (if you have multiple
accounts, it only stops the current one).

In many cases, you can also just press Command (Apple)-period.
