Stripping messages of file attachments

Is there anyway that a user can stip an attachment from a
message in outlook to shrink they're mailbox size to stay
under the limit set on the exchange server? I work for an
Architecture firm so the end users are constantly
receiving large file attachments, and we would like to
keep the messages for legal reasons, but save the
attachments on our production server instead of the mail
server.
