Sync between exchange and local calendar

This is either a feature request, or (if these controls already exist) a cry
for help in finding the controls:

Is it possible to synchronize between a calendar on an Exchange account the
the local "my computer" calendar. What I want to be able to specify is:

-- don't sync at all (appears to be the default state)
-- choose between local overwrites exchange, exchange overwrites local, or
sync
-- (best of all) specify only a subset of categories to sync

I really don't want my company to have access to my ENTIRE calendar ... just
the work related categories.

Any help would be appreciated,
