I do it every day - with an Exchange server.
The server allows me to sync e-mails, address book and calendar.

You can also do it through IMAP (mail only).

I'm not sure what you really want to do actually...

I want to be able to make changes and have him make changes and be able to
view those changes on either end without sending an email every single

You have to set that up from Outlook in Windows. You both need to be
delegate for each other. After that, you should both be able to make
changes in each other's accounts since Entourage has some support for
this function (even though you can't use this app to set it up).
