is there a way to tentatively add events to my calendar (and show on my shared calendar) so I don't get double (and triple) booked?

This is not supported by Entourage for Exchange accounts.

If you have Exchange Server 2007 then it will automatically tentatively
accept appointments for you regardless of whether you're using Entourage
or another mail application. However, for Exchange 2003 accounts I do
not know of a workaround.
