I don't usually believe in the "wait and see" approach to problem-solving,
but in this case it worked. On April 3, the time changed by an hour in the
US. And then I started getting emailed forms with 'sent' values that didn't
match the timestamp on the form. Now they do. I imagine some change was
made somewhere along the line. One odd thing I noticed, though: the 24-hr
value in the source was always correct for both the SMTP header and the form
itself. Only the 12-hour interpretation added by Entourage was off by an
hour, for a week or so. But I never made any changes. Go figure.
