I have to reformat my disk and I am installing Panther (I have Jaguar). I
have Office X with Entourage and want to keep all my settings and files
and emails and address book.

I was told (by applecare) that I have to re-install Office X and update
the versions again - but then what do I do to get all my files and
information onto Entourage. For Word, I assume I can just transfer my
folders with Word documents. But I don't know where all the
Entorurage stuff is and what I need to do to get it back.

Entourage data is stored here:
~/Documents/Microsoft User Data/Office X Identities/

The ideal way to back up in your situation is to move the entire Microsoft
User Data folder to an external medium, such as a CD, DVD, or backup hard
drive. Then, when Panther is all set up, drag the Microsoft User Data
folder back into your user's Documents folder. When you launch Entourage
you should see your data; if not, you'll probably need to re-select it in
Entourage -> Switch Identities.

Make sure you apply the latest updates to Office in Panther before
attempting this.
