How do I enable and access transport logging in
Entourage. I know how to enable and access in Outlook
and wanted to know if it is also possible in Entourage.

No. we never heard of it here. What does it mean? (It sounds a bit like
sending a big truck into a forest to pick up lumber.) Maybe there's a way to
do it, perhaps by script, if you can explain what it is.

Transport Logging is a means of troubleshooting
Microsoft Outlook supports the logging of the communications that occur
between Outlook and various types of e-mail servers. These logs can be
helpful when you troubleshoot problems with the transfer of messages between
Outlook and the e-mail server.

Outlook can log the communications with Microsoft Exchange, Post Office
Protocol version 3 (POP3), Simple Mail Transport Protocol (SMTP), Internet
Messaging Access Protocol (IMAP), and Hotmail servers.

I am very sure this option is not available for Entourage

But there are ways of doing those things with the Mac OS and Unix tools such
as tcpflow. You get a lot more than just Entourage, of course.
