Unable to edit received e-mails

Is there a reason that I cannot edit an e-mail that I received? This was
possible in Outlook for the Mac.

Highlight the message or open the message that you have received.

Then choose from the menu:

Message --> Edit Message

That option is grayed out. Would it be because we are using an Exchange
server and not POP?

Yes. But you can copy the message locally, edit it and then copy it back
to the Exchange Server replacing the original.
