If I understand you correctly, you've set up your account to leave copies of
your emails on the server after you download them to your computer. When you
"mark" an email with a red X (by clicking on the tiny envelope and selecting
"Delete Message from Server at Next Connection" from the drop-down menu),
you are telling Entourage to delete that particular email from the server
(but not from your computer) the next time you connect to the server to
download more email. So, if you have not yet re-connected to the server, you
can remove the red X (indicating that you have changed your mind and want
that particular email to remain on the server) simply by clicking on that
tiny envelope again and selecting "Leave Message on Server." But in either
case, the email itself (which you've already downloaded) remains on your
computer.

Just select the message in the message list, and then, under the "Edit"
menu, select "Undelete". Note that you must do this before you purge
deleted items from the folder, otherwise it will be gone.
