'Unicode'??

I've just, in the last few days, started getting a message when sending some
emails. it says "This message must be sent in Unicode format and...(blah
blah blah)".

If I okay it, the mail goes. As far as I can tell, an HTNL email remains
unchanged but a plain text one has he font changed.

Does anyone know what's going on here, and why this has started happening
now?

The reason is stated clearly in the warning dialog - your message contains
at least one character outside of the ASCII character set - maybe an
accented character, of small graphic character?

In order to ensure this character renders across all character sets likely
to be met at the recipient's end, Entourage wants to send it in Unicode,
which has a much wider character set than ASCII.
