Urgent Issue: How to restore Database with TM

I have this weird issue that has now caused lost emails. I will do my best
to explain:

I deleted a task by mistake and tried to restore the database. I went to TM
and restored the database from some hours prior. This did not work. The same
information kept coming up.

Today, I closed down Entourage and then Quit the running program, "Microsoft
Database Daemon" using the Activity Monitor. After opening up Entourage
again, it went to the old backup I tried to restore previously, from 3 days
back!

I tried to restore a more recent image of Entourage, from last night, but I
keep getting the same missing email. Is there a way to properly restore an
Entourage Database using TM or am I SOL?

First it is NOT recommended that you backup Entourage with Time Machine on
the hourly schedule. As a general rule you should shut down all Office
programs (including Office Notifications) before any Entourage backups. If
you do not quit the backup could be corrupt.

Next, don't just restore the database, restore the entire Identity folder.

Alternative method to use Entourage and Time Machine (does a once a day or
whatever time period you select) This quits Entourage and the Microsoft
Database daemon allowing for once a day backup into Time Machine.

Personally, I like another method better. It's very easy to revert to an
older Identity using this method:

Entourage and Time-Machine-like backup (creates chronological backup of
Identity can be used by both Tiger and Leopard allowing you to roll back to
previous dated backups.
