User defined field value missing

Hi
Platform: Outlook 2007 and Exchange 2003.

The user defined fields are still shown in Outlook, but the values are gone.
Any suggestions on how to retrieve this data?

Other info:
The user has Outlook 2007.
What changed just before this happened? The user logged onto another PC with
Outlook 2003.
What information are you keeping in user defined fields. e.g Field: Salary.
Value: 20,000.
All users or just one? The single User.
