I am leaving on vacation and would like to set up an automatic response to
incoming emails.
Entourage doesn't have an Out of Office Assistant. If you are accessing
mail from an Exchange Server, you can use Outlook Web Access or Microsoft
Outlook software to configure the server-level Out of Office Assistant to
your needs.

Make sure that you read the note at the bottom. If you don't want to or
cannot keep your computer on and internet connection active while you're
away, you should investigate to see if there is a server-level auto reply
function that you can use.
Additionally, I would like listserv messages to be placed
on hold while I am away.
You need to do this individually for each mailing list. Most mailing lists
send out instructions on how to do that when you subscribe, so I'd go back
and check them.
