Do you mean that calendar data appears in the Folder List under your
Exchange Server rather than in the Calendar view of Entourage? If so,
follow this advice I posted yesterday:
Make sure OWA is enabled on the Exchange Server.
DaveF suggested the following:
Tip: On the exchange server IIS interface. Make sure in properties of the
default web site, on the Web Site tab, "HTTP keep-alives enabled" is checked.
Once this is done, all Entourage clients free/busy info is updated and can
schedule appointments seeing user data on exchange.

If possibility #1 is the case, in that the server you connected to supports
mail retrieval but there is a separate server for other Exchange functions,
follow the instructions in Note #15.
