I am frustrated with Entourage and its Junk Mail Filter classifying
addresses that I am in correspondence with as Junk. I have made the
filter aggressive because of bad bout of junk mail. Ugggh.

These are addresses that I dont want to add to my address book, but
want to have a reliable coresondence. Is there a fix for this with a
third party application or script?

If you don't want to use the Address Book for this, you can either use the
Mailing List Manager, or create a Rule (If From Contains <email address>
then change status to not junk mail.

I use rules regularly. But if I have a brief correspondence with
someone
who responds to my advertisement selling my bicycle, I don't want to
keep their address. Why should I have to make a rule for this?

If you use a work address then you could create a rule Any Recipient Contain
<your work address>.

Why not put the individual's address in your address book and remove it when
you're done?
