while writing emails I see spacing & paragraph symbols.

If you're writing emails in Word, that's a good thing. You need to
know when you have empty paragraphs causing (otherwise mysterious)
extra space in your document.

If you insist on turning them off, press Ctrl-Shift-8.

To see only paragraph marks, turn them on in the Options.
