Why does FROM field not stay consistent????

I'm on OSX Jaguar, with latest version of thoroughly updated Entourage
(10.1.4)

I've several identities I use, one email for work, one for friends, one for
web stuff -- but whenever I respond to an email that, say, comes to my work
address, the REPLY version of the email ALWAYS shows my personal (family)
name and email address, even though the email's TO was to my work address.
How can I get the REPLY email to maintain the same email address that it was
sent TOO. It's a nuisance to have to go up and change the thing, every time
I respond to someone.

Prefs:Mail&make sure "reply using the default account" is off.
