Why does it sometimes mark a received email's text with ">" formy reply and other times not?

I'm running Entourage v.X to access an Exchange server. I get emails and
when I hit reply, sometimes it correctly marks the original sender's text
and puts them in front of a colored ">" symbol so that it's obvious which is
the other guy's text and which is my reply. For some emails, it doesn't
happen and I have to do it manually. Can anyone tell me what makes the
difference and how I can force it to do it every time I hit reply?

The ">" colored quoting only occurs when the reply is in plain text instead

If I hit "reply" and then turn the message to "plain text" by clicking on
the left-most icon (the html<->plain text switch to the left of the "Font"
drop-down menu), it doesn't work - it still sometimes won't do the ">"
colored quoting. It sounds (from what you said) that I have to somehow cause
it to reply in plain text *before* hitting "reply". Can you tell me how I
can do that? Thank you!!

Go to Entourage > Mail & News Preferences, and click the "Compose" tab. Set
the default mail & news formats to "Plain text". Click the "Reply &
Forward" tab. Uncheck the option to "Reply to messages in the format in
which they were sent", and click OK.
