With Entourage 2004 are you able to set up an auto reply?

You can create a rule that replies to every incoming message, but that
requires you leave your Mac running, not sleeping, and connected to the
Internet all the time. You would be better off using the capabilities of
your mail provider, if they have them.

Option 2: if you have an Exchange account, connect through webmail and
setup auto-reply from there.

To me, that's an example of "using the capabilities of your mail provider".

Webmail through an Exchange server offers this option (it's standard). Other
mail providers *usually* don't have that.
