Word into GB english ?

Depends what you mean. Which version of Word? And do you just want to change
the language used by the proofing tools? If you're wanting to change the
language for all of Word, see
http://homepage.swissonline.ch/cindymeister/LangFmt.htm for starters. If you
just want to change the language for a single document, Ctrl+A to Select
All, then go to Tools | Language | Set Language and select the appropriate
language (and clear the box for "Detect language automatically").

I'm using Word 2007 and had the same problem. Every new document was US
English.
I changed the default language in Word Options | Popular | Language
Settings, also in Windows (XP Home). US English still returned when I
restarted Word.
You have to also change the spell checker language (Review | Set Language).

Make sure that your Keyboard and Windows Regional settings are all set to
English (UK). Then run the Office Language Tool and make sure that English
(UK) is set as default and maybe uninstall any other language that you don't
want. Now open Word, Options, Popular and make sure it is set to English
(UK) and again uninstall any unwanted languages (though there shouldn't be
any at this stage). If there are, then something is stopping Word from
saving changes to the global template.
