I agree... On the other had, except in the Contact information,
Entourage doesn't really make a lot of use of these photos. I wish it
used them as Mail does displaying them next to the headers in each
e-mails.
Is there a list anywhere which describes what Entourage fields are synced to
what Address Book fields?

So, there's a plist describing what Entourage is syncing (I think) at
/Applications/Microsoft Office 2004/Office/Microsoft Sync
Services.app/Contents/Resources/ClientDescription.plist
There's another plist describing what Address Book et al are syncing at
/System/Library/SyncServices/Schemas/Contacts.syncschema/Contents/Resources/
Schema.plist
Apple's schema has an "image", Entourage's doesn't...
None of this explains what Entourage associates with each field. I guess
mostly they're obvious, but it would still be nice to see an actual list.

I really don't think so... The .plist lists what's set to be synched
amongst what is possible to be synched. Entourage simply does not sync
the pictures,
