Adding "&" as text in Header

I wanted to add the header "I & C" to the top of my spreadsheet but it continues to eliminate the "&" and just type "IC". I know this must have something to do with the functions available in Excel Headers where you can enter the date "&[Date]" and I believe that this is the reason Excel is eliminateing the symbol. Has anyone figured a way to allow it to be included??
