Adding more than 1 addressee to an e-mail message.

Within Outlook 2003, we cannot send an e-mail message to more than 1 person
at a time using the Address Book.

When we select one recipient and then a second, the second name does not
show up on the recipient line.

You didn't tell us much. Provide more information.
List the precise steps you are using and how your Outlook Address Book is
configured.
