adding ">" to HTML formated responses?

Hi, I am trying to figure out how (when i reply to an email formatted
in HTML and then change it to plain text) to insert the ">" in the
emails. It maybe obvious but i have managed to overlook it and can't
seem to figure it out.

Any help would be greatly appreciated!
