Allow user to specify default email account to send calendar item.

For small companies that run Exchange Server 2003 for meeting requests, but
do not want to house POP accounts on the internal server, it would be helpful
it Outlook would allow us to specify that all Calendar requests be sent with
the server mail account...

Or, is there more information on this subject that I can read up on?
