Always save in 2003 format?

Is there a way to set options in Word/Excel/etc.. to always save the
document in Office 2003 format instead of Microsoft's new XML format?

If so then how do I do it please?

In Word 2007 and Excel 2007, click on the Office symbol in the upper right.
At the bottom you will find an options button. Click and then select Save.
