Assigning a keyboard shortcut to launch a file

How can I assign a keyboard shortcut to open a spreadsheet (Excel 2007)?
I've tried right clicking the document and then Properties but this option
is not available.

Start by making a Shortcut on the desktop to the document, then R-click
the shortcut, select Properties, shortcut tab, shortcut key
