Assigning Tasks From A Shared Folder

My team has all the tasks in one shared task folder. What we would like to do
would be to be able to go into the list, identify something we can do, and
then assign it to ourselves, but whenever we try to do that (or assign it to
anyone) we get an error - we get a Undeliverable error from our administrator
and the task is locked (since it's waiting on a response to the email that
went nowhere).

Is there a way to do this, or do we have to have the person who is sharing
the folder assign the tasks?

My guess is that the "From" field is set to an address for which they do not
have Send As or Send on Behalf Of permissions for.

Thank you. Is that something that can be configured in Outlook, or is it more
involved than that?

It depends where the Tasks folder resides. In general as an admin you can
provide Send As or Send on Behalf Of permissions for the affected users on
the object holding that address in AD U&C.
