Auto date problem

How do I retrieve a document showing the date it was created and not the
current date?
I am trying to print a letter that I wrote in November last year with that
actual date on it but when I try to print it the date changes to todays
date.
I have made sure the auto date update box is unchecked but it still happens.

Any help appreciated.

Which field code is generating the date?
