I'm editing a book and thought I was going to have to take out all of the automatic indents and replace them with Tab characters, so I turned off that capability in Word (there was a little toolbox that pops up when it automatically indents, and one of the options was to turn that feature off). BUT, now I have worked out that I don't need to add those tab characters and that the auto-indents are fine, so how do I turn that feature back on so it automatically indents a new paragraph when you hit return?

The feature you're looking for is located in Word> Preferences> Edit.
Restore the check on "Tabs & Backspace set left indent".

That having been pointed out, however, for serious work Indentation [as well
as any other formatting] is best handled as a part of the paragraph styles
used in the document. The more direct formatting one uses the harder they
have to work unnecessarily & the more problematic & unstable the document.

If you are editing a book, you need to know how to really drive Word to do
the job more easily and save time. I save 20% of time that way.

For a start, take a look at the chapter on styles in some notes on the way I
use Word for the Mac, titled "Bend Word to Your Will", which are available
as a free download from the Word MVPs' website
(http://word.mvps.org/Mac/Bend/BendWordToYourWill.html).

[Note: "Bend Word to your will" is designed to be used electronically and
most subjects are self-contained dictionary-style entries. If you decide to
read more widely than the item I've referred to, it's important to read the
front end of the document -- especially pages 3 and 5 -- so you can select
some Word settings that will allow you to use the document effectively.]
