automatic bullets and dots between EVERY word& blue symbols all over the place

One day, I opened word, and every single one of my documents had bullets on every line and dots between every single word and space. My tool bar is missing, even when I go to view-toolbar...etc. There is a tiny blue arrow at the top after the title of my document. And, there are small blue symbols after every few lines. Please, help...I cannot read my work at all and I have tried everything!

Apparently you haven't tried "everything" :) For example;

To display your toolbars try clicking the oblong button at the right end of
the document window's title bar, and

To hide the non-printing characters try clicking the ¶ button on the
Standard toolbar once you have it displayed (or key Command+8). Those
markers indicate what accounts for the spacing in your document. They're an
indispensible tool for effectively editing a document & understanding why it
