Automatically protect mail merge form

We have letters that we create by doing a mail merge from our database which
is a SQL db on the back end, which we are using Access on the front end. I
need to see if there is a way to automatically protect the data after the
merge has been run, or find out if it can be automatically sent to a PDF doc.

Does anyone have some suggestions on how to do this?
